Ingredients for Badami Gosht
- ½ kg mutton, washed and dried
- 30 gms almonds, soaked in water and grind to a fine paste
- 12 flakes lasan
- 1” adrak
- 8 peppercorns
- 1 big onion, sliced fine
- 4 lavang
- 4 elaichi
- 1-2 pinches kesar, dissolved in ½ cup warm water
- 2 tsp dhania
- 1 tsp jeera
- ¾ cup beaten curd
- Juice of 1 lemon
- ½ tsp haldi
- 2 tbsp ghee
- Salt and chilli powder to taste
Recipe of Almond Mutton gravy
- Grind the following to a fine paste: dhania, jeera, adrak, lasan, kalimiri and red chilli powder (to taste).
- Heat the ghee and add a baghar of lavang, elaichi, adrak and lasan masala. Fry till the ghee separates and then add beaten curd, along with the mutton.
- Put in salt to taste and fry till the ghee separates.
- Dissolve the almond paste in 2 cups of water and add to the mutton along with kesar water.
- Cook till mutton is tender or pressure cook till done.
- Before serving sprinkle lemon juice to taste. Serve hot.
